Product Review: Ener-G Egg Replacer

Product Description:
Mimics what eggs do in recipes, Greatly simplifies baking for people who cannot use eggs. It replaces egg whites as well as egg yolks in baking. Pack equal to approximately 100 eggs. Recipes provided on pack.

Ingredients:
Potato Starch, tapioca starch flour, leavening (calcium lactate [not derived from dairy], calcium carbonate, citric acid), sodium carboxymethylcellulose, methylcellulose

Free of:
gluten, wheat, casein, dairy, egg, yeast, soy, nut, low protein, rice

For the past two years, I've been baking without Ener-G egg replacer, but keep hearing great things about it. And it's always the recommended egg replacer in recipes that provide recommendations. But I never got to going to one of those specialty stores to pick up some for myself. So I've been using either ground flax seed, or the egg replacer from the local supermarket. They always seemed to work fine. To me. But my omni friends who'd try my baking would always comment that its really dense. So finally, I went to the local organic store and picked myself up a box of Ener-G egg replacer, and tested it out on a quick and easy banana bread recipe that I've used dozens of times. The result? A really light and fluffy banana bread. It's amazing. So if you're thinking there isn't very much difference in the egg replacer you use, perhaps there is.
